I am changing up this meal a little. Instead of the Twice Baked Potatoes, I am going to put the meatloaf with Garlic Mashed Red Potatoes. I will put the Twice Baked Potatoes with something else. This meat loaf has become such a popular dish, that I really can't manage both the meatloaf and the twice baked on the same day, both dishes are very labor intensive and it is very difficult to be able to do them both. I will figure out a good main dish that the twice baked will complement well.

Menu for the week of December 13 to December 16

I have made it one time through most of the winter meals. I am going to work in some of the heartier summer meals into the rotation. They will help balance out my menu. Right now it takes about seven weeks to go through the winter menu. With the addition of the heartier summer meals added it will take nine to ten weeks for a complete menu rotation. There is good and bad news. The good is you won't get tired of eating the same thing over and over. The bad is if you really like something, it will take a while to come back around. 1 YEAR ANNIVERSARY !!!

Wow, it just doesn't seem like it has been a year since Meagan's Meals started. Where does the time go? I am so grateful to all of you for your continued love and support. It has really given me the boost to keep at this. I so enjoy it. There is nothing I would rather be doing. To "celebrate" this anniversary, I am having a little contest. When you come next week, I will have a little jar and you will write on a piece of paper how many meals you think have gone out the door in the last year. For those of you who haven't tried this, I want you to forget all your pre-conceived ideas about corned beef.
This is probably my signature meal. It is tender corned-beef brisket along with delicious sauteed cabbage.
This has has become probably the overall favorite meal that I prepare. If you say "Oh, I don't like corned beef
and I don't like cabbage" Just give me one chance to convert you, you will be glad you did. It is served with
a super yummy horseradish sauce that is the perfect compliment.

I tried this recipe out in February. It was one of my favorite new recipes to cook. I didn't get any feed-back (good or bad) on it. Eric loved it and thought it should go on the regular menu, but with the no feed-back it wasn't put on the menu. Fast forward 7 months, everyone who got it way back in February has asked why it wasn't put on the menu. I guess it was a hit after all. Truly, it is amazing. That's a big statement, but you have to try this. One bite and you won't want BBQ chicken any other way. You will BBQ this, but only to put the marks on the chicken. The recipe has me doing all the work for you. The chicken is cooked in the oven first, a dip in the sauce, and you grill it for less than 5 minutes at home.

Computer Crash

My computer crashed last week. I have everything on it. All my recipes, pictures from the last 5 years, and all my scrapbook stuff. I am so awful about backing anything up. I never do it. I was afraid I lost everything, but I have the most amazing computer tech. His name is Nathan. He got the computer fixed in 2 days. He was able to save everything. He fixed the computer and made it a million times better. The price was amazing. He doesn't charge for diagnostic. He was so fair. I gave him my kid's computer to fix up. WOW summer is going so fast. I can't believe it is August. Starting this week, I am going to stop cooking on Friday. It's is such a busy day for everyone and I never have that many signed up. On average, I only have 3-4 picking up on Friday, and Monday thru Thursday, I have 13-14 picking up. I still have to cook and shop the same amount of time. From a cost stand point it just doesn't work, I'm only earning $2.00 an hour on Fridays. That being said, I will be open for special order, family functions, and small catering events. What a wonderful name for a salad. This is really it's name. It's my nephew's favorite. He will ask me to make it. It is really good. The dressing is a wonderful poppy seed vinaigrette. This has been a wildly popular salad, several customers have requested more salad even if they had to pay extra. They love the salad that much. To keep the cost at normal price, I'm going to increase the amount of salad and eliminate the marinated steak. This is a very hearty salad on it's own. I don't think you will miss the meat. This is the only way I can keep this salad in the rotation and have it be cost-effective.

I'm sorry the new menu isn't up. I have had the worst tooth ache for 3 weeks. My husband could tell that I was hurting. I had to get my wisdom teeth pulled out Saturday night. I am terrified of going to the dentist. It's a huge phobia. It's amazing that I was able to go, but I was in so much pain. I am feeling much better. I will get it up tomorrow. Monday-Salad Day
Someone asked for the salads on Monday, so they could order extra for the rest of the week. Let me know if you want to do this, because if the ingredients are stored separate they stay fresh longer.

Tuesday- Miscellaneous

The soups are going to be lighter.

Thursday-Pasta Day

Friday- Sandwich Day
I am going to offer sandwiches on Friday with a salad. A lot of customers asked to do the sandwiches on Friday, so they can eat them at sometime during the weekend. With the spring and summer being so busy it will help to have a meal that will travel to the ballpark, a picnic, or a family reunion. The sandwiches and salads will all work with this idea. For the warm sandwiches just warm them in the oven before you go. Put them in a cooler and the will stay warm, just keep the lid shut. Put the salads in a different cooler, to keep it cold. And your ready to eat anywhere at anytime.

I'm so excited. As the spring turns to summer, I will use the fresh ingredients. Please let me know if there is anything you would like me to cook. I love suggestions. Please pass on the word if you know anyone who might be interested. I have a few more spots. Don't forget the free desserts.

Valentine's Day is next Sunday!


Valentine's Day is just around the corner. It is on Sunday this year, so I won't be making a meal. I do have a couple of options for your sweetheart. The first option is chocolate cake and 8 hand dipped strawberries. Here are pictures of my cake and dipped strawberries. (Photographs courtesy of Emily Burr. She is amazing.) The cake is very moist with a milk chocolate fudge like frosting with lots of chocolate curls. Pick up will be on Saturday and the cost is $12 for both the cake and strawberries. Orders will need to be in by Friday at noon.

The other option is a gift certificate. The gift certificate can be for any amount.
Instead of your sweetheart cooking let me do the work. The gift certificates can be redeemed at anytime and for any meal. Whatever your sweetheart needs or wants. Gift certificate orders need to be in by Friday at noon, as well. Pick up will be on Saturday, also. Happy Valentine's Day!!

I'm Full!! I'm Maxed Out!! I'm Tapped Out!! Choose your euphemism.

As much as I hate to say it: I'm full. Those of you who know me, know that I hate saying no. It's just killing me to post this. I won't be able to accept any more full time costumers. I just don't have any more room.

For most people, this won't affect you. If you would like to order and pay, as you like, you still can. I don't require my full time costumers to order every night. They can pick and choose what they want. This will create openings on varying days for other people to order. I will post any openings on the menu blogs right next to the meal itself. I will update this as close to real time as is possible. Orders need to be in no later than 8:00 pm the night before pick up.

I'm not closing the door on anyone. I hope to be able to accommodate everyone with the slots that are opened on the varying days. Please check the blog frequently. ANYONE who has ordered from me up to this point with any order, this won't affect you. Please keep ordering what you want.

I will be starting a waiting list. If you are interested in becoming a full time costumer, let me know. I hope that this doesn't cause any problems for anyone. If you have any questions or concerns please let me know.

I just want to tell everyone thank you for all your support. All my business has been from word of mouth. So, everyone who told someone and they told someone-THANK YOU!!!
