Monday, May 3
Southwestern Chopped Salad
Chipotle Ranch Dressing
Salad greens with tomatoes, red onion, cilantro, corn, black beans and tortilla strips tossed in a Chipotle Ranch dressing, and then topped with diced chicken, black olives, avocado, cheese and more tortilla strips. Yummy!!!!!!

Spring rolls are one of my favorites. I love making them lots of fun.

Honey-Lime Chicken Fajitas
Roasted Salsa Verde Sauce
Spicy Lime corn Dressing
These fajitas are hard to resist. The powerful marinade of lime juice and honey gives the chicken tons of flavor. I'll do everything but grill the chicken. Let me know if you want me to cook.

Menu fot the week of April 26 to April 30

I'm sorry the new menu isn't up. I have had the worst tooth ache for 3 weeks. My husband could tell that I was hurting. I had to get my wisdom teeth pulled out Saturday night. I am terrified of going to the dentist. It's a huge phobia. It's amazing that I was able to go, but I was in so much pain. I am feeling much better. I will get it up tomorrow. Thank you for all your support and understanding.

Menu for the week of April 19 to April 21

This week I will be out of town for a family wedding. So, I won't be cooking for Thursday and Friday. I just wanted to tell everyone thank you for trying the new menu items. Everyone has been so wonderful. It's been fun making the new recipes. I am going to get rid of the soups on Wednesday. No one wants to eat hot soup on a hot day. I am going to replace it with BBQ. I have had a lot of request for this. I will prepare the food and you can grill it yourself at home. If you can't BBQ at home or don't want to just let me know and I'll cook it for you. Wednesday April 21
Pimiento Cheese and Bacon Burger
Baked Beans
To inaugurate the grilling season this year, don't throw just a plain old burger on the fire. This is not a fast food burger, but a work of art. With baked beans it makes a perfect pair.
