Menu for the week of January 3 to January 4

As you can see, it's another short week. I have to go to Phoenix on Wednesday and won't get back until late Sunday. Hopefully, everything will be back to business as usual after this trip. I hope everyone is have a wonderful holiday season. Thank you for all you do, Meagan.

A great "not too heavy" chowder. Made with sweet white corn. A touch of bacon finishes off this meal.

MERRY CHRISTMAS!!

Hi everyone, as you can see I am only doing Wednesday and Thursday of next week (29th & 30th). We will be doing a bit of traveling during the holidays and I won't be here on Monday and Tuesday. Wonderful hand-rolled pasta with a homemade tomato sauce. Outstanding.

Meatloaf
Garlic Mashed Red Potatoes
I am changing up this meal a little. Instead of the Twice Baked Potatoes, I am going to put the meatloaf with Garlic Mashed Red Potatoes. I will put the Twice Baked Potatoes with something else. This meat loaf has become such a popular dish, that I really can't manage both the meatloaf and the twice baked on the same day, both dishes are very labor intensive and it is very difficult to be able to do them both. I will figure out a good main dish that the twice baked will complement well.

Monday, December 20
Shepherd's Pie
Bread
I slow-cook the roast beef and vegetables until they are absolutely tender. Is there anything better than homemade mashed potatoes? They top this wonderful dish with a touch of cheese. Homemade rolls finish off this meal.

Tuesday, December 21
Homemade Wonton Soup
Crisp Wontons
It's a very simple chicken soup. The Wonton make it outstanding. Yes, I will be making the wontons from scratch. Served with the crispy wontons.

Wednesday, December 22
Baked Spaghetti
Italian Dinner Rolls
A fun twist on a classic dish. It is super good!! This item was a HUGE hit every time.


Thursday, December 23
Chicken Marsala
Lightly Buttered Egg Noodles
Tender chicken cutlets are lightly breaded. Served with lightly buttered egg noodles with a traditional Marsala sauce. This was wildly popular last winter.

Menu for the week of December 13 to December 16

I have made it one time through most of the winter meals. I am going to work in some of the heartier summer meals into the rotation. They will help balance out my menu. Right now it takes about seven weeks to go through the winter menu. With the addition of the heartier summer meals added it will take nine to ten weeks for a complete menu rotation. There is good and bad news. The good is you won't get tired of eating the same thing over and over. The bad is if you really like something, it will take a while to come back around. Roasted Chicken with Late-Summer Vegetables
Pan Sauce
I have found, with some trial and error, that the dark meat chicken works MUCH better with this recipe. The chicken stay moist and tender and has a ton more flavor than white meat. The vegetables are wonderful. The pan sauce finishes it off beautifully.
