Menu for the week of October 25 to October 28

Monday, October 25
Shepherd's Pie
Rolls
I tried this recipe out in February. It was one of my favorite new recipes to cook. I didn't get any feed-back (good or bad) on it. Eric loved it and thought it should go on the regular menu, but with the no feed-back it wasn't put on the menu. Fast forward 7 months, everyone who got it way back in February has asked why it wasn't put on the menu. I guess it was a hit after all. Truly, it is amazing. I slow-cook the roast beef and vegetables until they are absolutely tender. Is there anything better than homemade mashed potatoes? They top this wonderful dish with a touch of cheese. Homemade rolls finish off this meal.

Chicken Marsala
Lightly Buttered Egg Noodles
Tender chicken cutlets are lightly breaded. Served with lightly buttered egg noodles with a traditional Marsala sauce. This was wildly popular last winter.

Wednesday, October 27
Corn Chowder
Homemade Rolls
A great "not too heavy" chowder. Made with sweet white corn. A touch of bacon finishes off this meal.

Thursday, October 28
Manicotti
Garlic French Bread
Wonderful hand-rolled pasta with a homemade tomato sauce. Outstanding.

Beef Bolognese with Penne Pasta
Garlic Bread
This hearty meat sauce is the definition of old world Italian food. Served with noodles. It is a very earthy and satisfying dish.

Tuesday, October 19
Roasted Chicken with Late-Summer Vegetables
Pan Sauce
I have found, with some trial and error, that the dark meat chicken works MUCH better with this recipe. The chicken stay moist and tender and has a ton more flavor than white meat. The vegetables are wonderful. The pan sauce finishes it off beautifully.

Homemade Wonton Soup
Crisp Wontons
It's a very simple chicken soup. The Wonton make it outstanding. Yes, I will be making the wontons from scratch. Served with the crispy wontons.

Thursday, October 21
Cobb Salad Sandwich
Lemony Fruit Salad
A classic New Orleans sandwich meets California style for a super-size makeover everyone at the dinner table will love. A super yummy bleu-cheese infused mayo is just the right compliment. Until it turns cold I want to keep a few summer items on the menu. This is by far my most popular sandwich. Enjoy!!

French Dip with Au Jus
Cole Slaw
Tender beef, melted cheese, and a drenching in flavorful au jus --what’s not to love? Unlike most french dips this sandwich is not filled with deli sliced meat, rather, lean beef that has been roasted to perfection and shredded.

Wednesday, October 13
California Chicken Burger
Garden Salad with Ranch
This is a wonderful honey-lime chicken cutlet. The cutlet will be very tender and easy to cook. The burger comes with shredded lettuce, guacamole, and green onion mayo.
