1 YEAR ANNIVERSARY !!!

Wow, it just doesn't seem like it has been a year since Meagan's Meals started. Where does the time go? I am so grateful to all of you for your continued love and support. It has really given me the boost to keep at this. I so enjoy it. There is nothing I would rather be doing. To "celebrate" this anniversary, I am having a little contest. When you come next week, I will have a little jar and you will write on a piece of paper how many meals you think have gone out the door in the last year. The person that comes the closest wins a free full meal and a free dessert of their choice. Thanks again!! You will have all week next week to enter. It should be fun. This chicken dish gets its earthy flavor from chicken thighs, mushrooms, green onions and soy sauce and its sweetness from fresh orange juice and a touch of orange zest. I use thighs in this dish, because they are much more flavorful and moist.

Menu for the week of November 22 to November 23

Hi Everyone. Here is the menu for Thanksgiving week. I will be preparing meals for Monday the 22nd and Tuesday the 23rd of this week. After talking with several of you, it looks like a lot of you will be leaving town Wednesday or having family come to your home for Thanksgiving. I hope everyone has a wonderful holiday. Sesame chicken is a Chinese takeout favorite. Everyone seems to crave these crispy pieces of chicken tossed in a delicious sweet sesame sauce topped with sesame seeds and green onion.

One great-tasting filling, two simple sauces (a bechamel and red sauce), and a pillow-light texture--all rolled into one perfect dish!!!! This meal was very popular.

Irish Brisket with Horseradish Sauce
Sauteed Cabbage
For those of you who haven't tried this, I want you to forget all your pre-conceived ideas about corned beef.
This is probably my signature meal. It is tender corned-beef brisket along with delicious sauteed cabbage.
This has has become probably the overall favorite meal that I prepare. If you say "Oh, I don't like corned beef
and I don't like cabbage" Just give me one chance to convert you, you will be glad you did. It is served with
a super yummy horseradish sauce that is the perfect compliment.

Menu for next week

Hi Everyone....I am waiting to post my menu for next week until tomorrow (Wed). I need to see if I can get the corned beef briskets that I normally have been able to get, to see whether or not I can put them on next week's menu. Thanks in advance for your patience. I know that the Irish brisket with cabbage is a HUGE favorite of many of you. I sincerely hope I can get the meat that I need. I will post tomorrow with next week's menu.
