This salad is loaded with meat and cheese. This is a meal in itself. Chef salad is always a favorite.

Pepper Jack Cheese Burger
Mexican Egg Rolls
This cheese burger will breath a little life into the ho-hum patty. Don't worry about too much heat, it's just the right amount. The egg rolls are like the one you can get at Chilis. These were a HUGE hit last time.

Chicken Enchiladas
Toppings
Yes, these are my normal enchiladas.

Friday, July 9
Cobb Salad Muffuletta
Grape Salad
A classic New Orlean's sandwich meets California style for a super-size makeover everyone at the dinner table will love. A super yummy bleu-cheese infused mayo is just the right compliment. I know a lot of you are looking forward to this one.

White Rice
Fortune Cookies

Friday, July 2
I have spoken to many customers and look like a lot of people will be busy or out of town for the Holiday. I will not be cooking for Friday, July 2nd and Monday, July 5th. I will post the new menu before Friday. I hope everyone has a fun and safe 4th of July. The week after the 4th, the Southwestern egg rolls will be back. Everyone keeps asking when.

Menu for the week of June 21 to June 25

I am going to change Tuesday to a sandwich day. I have a lot of sandwich recipes. Everyone keeps asking when their favorite is coming back. Right now it will take around two months to run through all the different sandwiches. Let me know how this is working for you. I always love comments. Thanks for everything.

Monday, June 21

Southwestern Chopped Salad
Chipotle Ranch Dressing (if you want regular ranch let me know)
This is different from the salad we had two weeks ago. Salad greens with tomatoes, red onion, cilantro, corn, black beans, diced chicken, black olives, avocado, cheese and tortilla strips. Top it all with a Chipotle Ranch dressing. Yummy!!!!!!

Tuesday, June 22
Philly Steak Sandwiches
Lemony Fruit Salad

Wednesday, June 23
Honey-Lime Chicken Fajitas
Grilled Guacamole
Spicy Lime Corn Dressing
These fajitas are hard to resist. The powerful marinade of lime juice and honey gives the chicken tons of flavor. I'll do everything but grill the chicken. If you want me to grill them for you let me know.

Thursday, June 24
Cheese Ravioli with Marsala Cream Sauce
Garlic Parmesan Crustinis
Ravioli filled with cheese, then topped with Marsala cream sauce. The crustinis are wonderful.

Menu for the week of June 14 to June 18

Monday, June 14
BLT Salad
I love the idea of changing a favorite sandwich into a salad. All of the sandwiches ingredients are here, including the bread, but in crouton form. The salad comes with a wonderful creamy basil dressing. This is an outstanding salad

Tuesday, June 15
Baked Spaghetti
Bread Twists
A fun twist on a classic dish. The bread twists are soooo good!!!!
This item was a HUGE hit the last time.

Wednesday, June 16
Pimiento Cheese and Bacon Burger
Baked Beans
This is not a fast food burger, but a work of art. With baked beans it makes a perfect pair.

Thursday, June 17
Enchilada Lasagna
Toppings
This is a wonderful combination of my chicken enchiladas,
barbacoa sweet pork and pork burritos. It is such a fun meal.

Friday, June 18

French Dip with Au Jus
Cole Slaw
Tender beef, melted cheese, and a drenching in flavorful au jus --what’s not to love? Unlike most french dips this sandwich is not filled with deli sliced meat, rather, lean beef that has been roasted to perfection.

Menu for the week of June 7 to June 11

Monday, June 7
That Good Salad
Marinade Flank Steak
What a wonderful name for a salad. This is really it's name. It's my nephew's favorite. He will ask me to make it. It is really good. The dressing is a wonderful vinaigrette.

Tuesday, June 8
Pork Burritos
Toppings
I have made this before. Everyone really liked this recipe. It was very popular.

Wednesday, June 9
Southwestern Salad with a Grilled Quesadillas
I know these are two things you wouldn't normally put together. The combination might be a little unconventional, but it tastes great. You will be grilling the cheese quesadillas at home. Let me know if you want the regular ranch dressing or the chipotle ranch.

Thursday, June 10
Cannelloni
Garlic Bread
One great-tasting filling, two simple sauces (a bachamel and red sauce), and a pillow-light texture--all rolled into one perfect dish!!!! This meal was very popular. I am going to use crepes instead of manicotti noodles. It is wonderful with the crepes.

Friday, June 11
Hawaiian Chicken Salad Sandwich
Macaroni Salad
This is a fun twist on chicken salad. The pesto-mayo salad dressing uses the wonderful taste from Hawaii. A sweet pineapple salsa brings this dish together.
