Menu for the week of September 7 to September 9

Hi everyone...I am just letting you know that I will be leaving on Saturday, August 28, for a cruise to Alaska (yay!). Therefore, I will not be preparing meals for that following week. I will be returning on Labor day (Sep. 6) and will be back in full swing preparing meals that week. I will prepare meals for Tues, Wed, & Thurs of that week. Below is my menu for September 7-9. Thanks so much to all of you for your continued love and support. I will look forward to seeing everyone when we get back. Thanks again everyone!!

Tuesday, September 7
Cobb Salad Sandwich
Lemony Fruit Sald
A classic New Orleans sandwich meets California style for a super-size makeover everyone at the dinner table will love. A super yummy bleu-cheese infused mayo is just the right compliment. I know a lot of you are looking forward to this one. This is by far my most popular sandwich.

Wednesday, September 8
The Best BBQ Chicken Ever
Macaroni Salad
That's a big statement, but you have to try this. One bite and you won't want BBQ chicken any other way. You will BBQ this, but only to put the marks on the chicken. The recipe has me doing all the work for you. The chicken is cooked in the oven first, a dip in the sauce, and you grill it for less than 5 minutes at home.

Thursday, September 9
Chicken Parmesan
Pasta
Tender cutlets of chicken, lightly breaded with a super fresh sauce. Everything is homemade from the bread crumbs to the sauce.

I will post the menu for the week of September 13 to September 16 on the Monday that I get home.

Yummy Crusty Hard Rolls
This salad is loaded with meat and cheese. This is a meal in itself. Chef salad is always a favorite.

Tuesday, August 24
Pulled Pork Sandwiches
Cole Slaw
This is my husband's favorite side dish that I make. The pulled pork and coleslaw really compliment each other.

Wednesday, August 25
California Chicken Burger
Garden Salad with Ranch
This is a wonderful honey-lime chicken cutlet. The cutlet will be very tender and easy to cook. The burger comes with shredded lettuce, guacamole, and green onion mayo.

Thursday, August 26
Chicken Enchiladas
Toppings
Yes, these are my normal enchiladas.

Computer Crash

My computer crashed last week. I have everything on it. All my recipes, pictures from the last 5 years, and all my scrapbook stuff. I am so awful about backing anything up. I never do it. I was afraid I lost everything, but I have the most amazing computer tech. His name is Nathan. He got the computer fixed in 2 days. He was able to save everything. He fixed the computer and made it a million times better. The price was amazing. He doesn't charge for diagnostic. He was so fair. I gave him my kid's computer to fix up. If you ever need computer work, he is the man to ask. He did such a great job, I told him he I was going to put him on my blog. I'm going to put his information on a sidebar, too. His number is 801-859-6493. If you have any question you can call him or email me at meagansmeals@q.com

Menu for the week of August 16 to August 19

Monday, August 16
Southwestern Chopped Salad
Chipotle Ranch Dressing (if you want regular ranch let me know)
This is different from the salad we had two weeks ago. Salad greens with tomatoes, red onion, cilantro, corn, black beans, diced chicken, black olives, avocado, cheese and tortilla strips. Top it all with a Chipotle Ranch dressing. Yummy!!!!!!

Tuesday, August 17
Meatballs Subs
Potato Salad

Wednesday, August 18
Pepper Jack Cheese Burger
Mexican Egg Rolls
This cheese burger will breath a little life into the ho-hum patty. Don't worry about too much heat, it's just the right amount. The egg rolls are like the one you can get at Chilis. These were a HUGE hit last time.

Thursday, August 19
Cheese Ravioli with Marsala Cream Sauce
Garlic Parmesan Crustinis
Ravioli filled with cheese, then topped with Marsala cream sauce. The crustinis are wonderful.

Menu for the week of August 9 to August 12

WOW summer is going so fast. I can't believe it is August. Starting this week, I am going to stop cooking on Friday. It's is such a busy day for everyone and I never have that many signed up. On average, I only have 3-4 picking up on Friday, and Monday thru Thursday, I have 13-14 picking up. I still have to cook and shop the same amount of time. From a cost stand point it just doesn't work, I'm only earning $2.00 an hour on Fridays. That being said, I will be open for special order, family functions, and small catering events. Prices start at $5 per person. So, please don't hesitate to ask if you are interested. Thank you everyone for all your support. Love, Meagan

Monday, August 9

Chinese Chicken Salad
Hard Roll

Tuesday, August 10
French Dip with Au Jus
Cole Slaw
Tender beef, melted cheese, and a drenching in flavorful au jus --what’s not to love? Unlike most french dips this sandwich is not filled with deli sliced meat, rather, lean beef that has been roasted to perfection and shredded.

Wednesday, August 11
Honey-Lime Chicken Fajitas
Grilled Guacamole
Spicy Lime Corn Dressing
These fajitas are hard to resist. The powerful marinade of lime juice and honey gives the chicken tons of flavor. I'll do everything but grill the chicken. If you want me to grill them for you let me know.

Thursday, August 12
Teriyaki Steak
White Rice
Fortune Cookies
